<p>It's a foggy morning in the near-perfect village situated by the sea in central Vietnam known as Hoi An. I am standing in a rice paddy and my New Balance sneakers are covered in brown clay from the saturated ground. Staring off into the distance, I notice Todd shooting b-roll.</p>
<p>My socks are wet, but I don't notice because of the view - it is one of complete calm, with green growth, grey water and paddies stretching out for what seems like miles in each direction ...an open playing field of agriculture at its most base. In my view, there are three women in conical hats slowly pulling at the stalks with the country's most prevalent foodstuff at their ends - it is a delicate process, compounded to almost an art as the women's hands move with uncanny deftness, repeating the same process that most likely has been done by them for many years.</p>

<p>In the center of an adjacent paddy there is a water buffalo pulling a plow with a farmer on its back. The beast is looking downright joyous, dragging its heavy load behind it, taking time to lower its snout into the gray water below and then splashing to the left and right while plodding down a line of rice grass. I am nearly mesmerized by this, as the massive animal reaches the end of a line of green, it turns completely around and begins the process on another endless string of rice plants.</p>
<p>I am surrounded by tradition - The tradition of the rice pickers in the field, the tradition of the farmer riding his plow and the tradition of the buffalo doing its daily walk. This is all common ground for them ...I feel almost as if I am invading their space.</p>
<p>I turn to Todd, who has his face buried in the sunshade of the viewfinder, most likely in a shooter's paradise of amazing footage to be had all around him. I ask, "Did you get that water buffalo?"</p>
<p>He looks up from his viewfinder, "Yes ...a few different sizes.  You see anything else that we should get out here?"</p>
<p>I do a 360-degree scan of the area, and my eyes set on another, yet another water buffalo moving slowly up the narrow shelf of clay. Todd and I chose to wander out, on to shoot the paddies. The strip we are standing on is about 3 feet wide and stands nearly a foot above the flooded plane where the rice is planted.</p>
<p>After a quick calculation, it becomes very clear that either Todd or I, or the approaching water buffalo, is going to have to get off this shelf and into the half submerged paddies for this to work out. And she is not looking like she will be getting out of our way - I feel like I am playing chicken with a massive, grayish-black, horned, and motivated beast ...but in super slow motion.</p>
<p>I then notice the two calves behind her.</p>
<p>Now this is interesting. A mom and two calves, walking towards Todd and I, with nowhere to go but through or around us. It is basic knowledge that in the wild (or elsewhere) it is never a good idea to upset a mother when her offspring are nearby - it is just bad business, and even the most docile and cute animals tend to get nasty when you mess with the kids. Naturally that rule is compounded when the mother in question has horns spanning nearly 6 feet, and the neck muscles are capable of tossing my 190-pound frame into the air like a wet tissue wearing a backpack.</p>
<p>I tell Todd, "Well, here is another one of them heading right for us.  And she's got her kids with her."</p>
<p>Todd, looks up, looks at me and then starts filming our approaching guests. She is not paying any attention to us, and walks up the narrow stretch of land toward our position. Twenty-five feet ...20 ...15 ...10 ... and then, the mother heads off the clay shelf into the paddies to our left, and the calves branch off to paddies on our right.</p>
<p>Now Todd and I are standing right between a mother and her children.</p>
<p>Yikes.</p>
<p>At that moment she notices us - and her body language shifts immediately from the trundling mass of a docile farm animal to a different sort altogether. She stands upright and completely still, looks directly at me and starts breathing in a not-so-friendly fashion. It sounds like half-stifled coughs, but with a lung capacity of, well, a buffalo, behind the brays. Her eyes do not look kind, to say the least.</p>
<p>I hear Todd say, "I don't think she likes you.</p>
<p>"I get that feeling too."</p>
<p>I pull my camera out of my pocket and start firing off some still photos, "Hey Todd, just so you know, I am documenting this in case we both get gored by a water buffalo. Hopefully they will find the camera."</p>
<p>I realize that this is not a funny comment and put the camera away. She is still breathing like a goddamn freight train and staring me right in the eye.</p>
<p>"Not sure what the protocol is for handling this sort of thing. Stand still and hope for the best, huh?"<br /> <br />And as the last word falls out of my mouth, she forgets about me and starts giddily splashing away to rejoin her calves. Just like that.</p>
<p>I remember to breathe in ...and ask Todd, "Did you get that?"</p>
<p>Todd nods his head.</p>

<p>It is the night of our arrival in Manila, and usually on the day we arrive and before we begin principal photography, I spend my first few hours meeting with our fixer to discuss any changes or adjustments to our shooting schedule.</p>
<p>After that, I reach out to tomorrow's locations to touch base and remind them of the times that we are coming to film with them.</p>
<p>Finally, I head up to my hotel room and make sure the mini-fridge in my hotel room is functioning properly by testing the coldness of a beer before I go to sleep.  It sometimes takes two beers to be certain, but up to this point I have not found a broken mini-fridge.</p>
<p>That is a normal arrival day.</p>

<p>My first night in the Philippines is not a normal arrival day.</p>
<p>It's nearing midnight, and I am riding in an ordinary looking white van through the hectic streets of Metro Manila.  There are people everywhere I look, all doing their usual night time routine ...the city feels alive with energy, and it is all moving past me in a blur as I scan the storefronts of the many bodegas that line the crowded sidewalks.  I am looking for something vital for our upcoming shoot days.  Something that, quite frankly, we need badly seeing as the temperature here doesn't seem to ever go below eighty degrees and it's humid.</p>
<p>I am on a desperate mission to find a drugstore that is open at this late hour to buy some deodorant.</p>
<p>Yep ...that's right.  Deodorant.</p>
<p>We (the crew) are in desperate need of toiletries, and I am trying to find the one item that quite possibly has changed the face of the modern world.  I keep reminding myself it is a noble quest as we pass more and more closed drugstores.  Reminding myself to keep my eye on the prize.<br /> <br />Why, you may ask, is there such an urgent need for this solo excursion into the streets of Manila at this time of night after nearly 20 hours of flying with so many other things to do before cameras go live tomorrow morning?</p>
<p>I will explain -</p>
<p>As any traveler knows, there are apt to be some hiccups in the great world of trains, planes, and automobiles.  Mostly those hiccups take place on the planes ...not so much in the air, but the process of getting them in the air on time.  Delays, cancellations and missed connections ...these things happen - and since the travel situation on this show is more akin to "planes, planes, and more planes" it is surprising that things do not go awry more often.<br /> <br />We hit a triple hiccup (delayed, cancelled, missed connection) on the way to the Philippines, and as to not bore you with the exact airport logistics, I will simply say that it was not our day at JFK.  Certain things occurred at the airport that caused us to arrive in Manila 12 hours later than planned, and with only our carry-on luggage and three cameras.</p>
<p>No personal checked bags (Including toiletries, socks, underwear, outerwear).</p>
<p>No additional film equipment (Including many items that are vital for our shoot, items that are hard to replace while on the road).</p>
<p>And most disturbing, perhaps...</p>
<p>No way to tell when any of it would arrive (Including me figuring out how to purchase everything we may need to properly shoot this show.  It's a long list without having to buy us all clothes for the week. So now it's a longer list).</p>
<p>Granted, we always carry-on the cameras and sound kits for our shoots, so we have what we need to start filming the episode tomorrow morning, but no matter how much you rub a Sony-V1U on your underarm you wont get all day wetness protection coupled with a pleasant scent.</p>
<p>You will most likely get a rash, almost definitely have someone give you a nervous glance and quite possibly be arrested.</p>
<p>It is close to midnight when I find some, and I feel about ten pounds lighter as I hop back into the van to head back to the hotel to start my usual arrival day work.</p>

<p>Our missing bags arrive at the hotel the next morning, and I end up leaving five travel sticks of varying brands of deodorant behind on my hotel sink when I leave Manila at the end of the shoot.</p>
<p>The housekeeping crew must have thought I was a little strange.</p>

<p>I'm watching Tony Bourdain eat roadkill.</p>
<p>For the last hour I've been cutting a scene of Tony at a Chicago restaurant that specializes in molecular gastronomy of a rather unusual variety. Try to imagine Ferran Adria's El Bulli crossed with a novelty gift shop that sells chocolates in the shape of dog turds and you'll get some idea of the place.  He's just had a big bite of a dish called "Roadkill," actually it's a very delicately prepared dish of shredded duck confit with a splattering of a beet puree and a toasted rosemary infused marshmallow that is meant to resemble entrails, or maggots, or ...well, you get the idea</p>

<p>It's a fun scene and the kind that usually cuts itself. Tony is clearly digging this kooky molecular gastro- concoction.  At one point he says kiddingly, "I may have eaten roadkill before." But is he really kidding?  One of the aspects of this show that consistently amazes me is Tony's willingness to eat whatever his hosts are generous enough to offer. Anything and everything.</p>
<p>Anyone who has been even a casual viewer of this series has likely seen Mr. Bourdain ingest fermented meats, fermented meat liquor, raw poultry, animal genitalia (lots of animal genitalia), Hawaiian luau steam-table fare, various and sundry livestock organs and, of course, unwashed, semi-cooked warthog rectum, and that's just scratching the surface. In other words, he doesn't just talk the talk he walks the walk and he keeps on walking the walk.</p>
<p>A lot of travel show hosts may "eat for the camera," meaning a few bites just enough to get the scene done, but when you see Tony eating a meal, he's actually eating that meal.  Whether it's a 15-course tasting menu or a pound of grilled hyenna spleen, he is there.  And of course, it's worth noting that it's not just the meals you see in the show that he eats, there's also the meals that wind up in the International versions of the show and the meals that don't even make it out of the edit room.  What you see isn't what he's done . . .it's merely a portion of what's he's done.  At times it's a burden, we should all be so lucky to have, at other times it borders on literally putting his health (at least his gastro-intestinal health) in jeopardy.  It lends another layer of authenticity to the show and is a testament to his dedication.</p>
<p>But it doesn't just stop at food. In addition to keeping it real with his meals, TB also does his own stunts.  Perhaps, he would rather not, but through the magic of semi-planned circumstance, what you see is what he got.  Getting rolled over twice by an ATV in New Zealand -- no stunt-double there.  Descending hundreds of feet into a wet, stinking, treacherous, bat shit-filled cave in Jamaica - that was really him.  And sitting through hour upon hour of mind-numbing conversations about crop cycles with German-Namibian farmers - all Tony.</p>
<p>So just remember, next time you're really enjoying an episode of "No Reservations," or if you're not enjoying it, or if you're pissed because you're watching the same repeat from season 2 that's been airing for the one millionth time, just remember what Tony does.  For your entertainment alone Tony risks it; for your entertainment alone Tony does it; and for your entertainment alone. . . Tony eats it.</p>

<p>Tony's driving our big black Caddy, skimming the Ike, just south of downtown Chicago. I'm lying down in the backseat, deliberately in hiding. Trying to act like it's cool. Like it's totally not uncomfortable. In every sense of the word. You must know, faithful Bourdain Crew Blog Reader, how Tony doesn't like doing the walking shots? Well apparently he doesn't like repetitious driving shots either, as evidenced by his increasingly road-rage-alicious maneuvers. Oh, and the occasional explosive swearing was a little hint, too. As I'm trying to multitask on my new iPhone, navigating prone and linked with the crew van, I'm so glad they're yukking it up over there. I can hear Chris, Diane, Alex, Kira, Erik and even my brother William, whom I recruited to drive, practically singing "99 Bottles of Beer on the Wall." By the way, Chris, when you told me to duck down to get out of the shot and I dropped down to the right, I heard you say, "I wish she would have leaned the other way!" Ha. Ha. Meanwhile I desperately cling to the fine leather upholstery, trying not to get flung hard to the floor. At least I'm grateful for all the time I spent on a Deadliest Catch-esque fishing boat this summer curing myself of motion sickness.</p>
<p><!--more--> And at that moment my skin felt electrified. It was a position you would have killed to be in - as weird as it was. I didn't want to be anywhere else. Doing anything else. With anyone else. Thanks to Tony, Chris, Lydia, Diane and the entire  "No Reservations" crew - my dear, extended, endlessly entertaining dysfunctional family - I have been allowed to live an adventurous food life far beyond what I deserve. </p>
<p>Three weeks ago, as of this blogging, we wrapped the long-awaited Chicago shoot. Tony mentions it briefly in his recent blog post about the upcoming Season 5. He writes, "Our Chicago show was filmed in a state of full-on hero worship, as I've been long besotted by Michael Mann's Chicago-based film, 'Thief.'" By the way, that film is beyond noir - the story is black-hole black - and to play amateur forensic psychologist, wow an insight into Tony's psyche, I think - but incredibly beautiful to watch. </p>
<p>I again worked as a fixer. I hold the distinction of being the first ever "No Reservations" fixer. Remember me in the meat market scene in Paris? And what is a fixer, you ask? In the job description it's a local translator and guide. For Tony fans, you'll understand when I say I was the Zamir. </p>
<p>So this summer I was cooking away for the Alaskan fishing boat and lodge and I got the call from Lydia. Chicago's on. In a month. And to paraphrase another film - film nerds that we are - it was an offer I could not refuse. Chicago is my hometown, and I have been waiting for nearly four years for the show to come to my town. Yes, of course we went to Hot Doug's, home to the infamous, once-illegal foie gras hot dog and duck-fat-fried fries - still served Fridays and Saturdays only.</p>
<p>And yes, we had pizza, but probably not anywhere you would think. We went to my beloved Burt's in the occasionally Twin Peaks-ish suburb of Morton Grove. The inimitable Burt and his gorgeous caramelized crust were featured on the cover of Saveur's Chicago issue last year. </p>
<p>But no beef. Yes, fellow Chicagoans, you heard me. No Italian beef. Why? Because as you know, we have an embarrassment of food riches. And we did the Mother-in-Law instead. You've never had the South Side specialty of a Chicago-style tamale smothered in chili, garnished with onions and sport peppers, wrapped in a warm poppy-seed bun? Well ya see, there's more to Chicago than just dogs, pizza and beef. </p>
<p>But we did have beef. And as my hair stylist Daniel dubbed them, Beef Daddies: Tony and Very Special Guest, Eric Ripert. I found myself with Tony and Eric (Freakin') Ripert at L20 nestled into our own private tatami room. I fully expect to be cut out of that scene, like the end person in a wedding party pic. </p>
<p>And speaking of beef, I called it at the Wagyu. L20's Chef/Partner Laurent Gras, an old friend of both Tony and Eric's, even had the audacity to send out the muzzle-printed certificate of authenticity. I mean come on now, Laurent - did you really need to flop that out? It was more than enough that each bite of that beef was like the crispy charred bit of fat that you steal off a steak even when it's too hot because it's that good. Every single bite of that entire deathbed-memorable meal was all that good. But I could only take two bites of the Wagyu- one wocka-wocka food porn one for the camera and the other one purely for my own gratuitous pleasure. As for the rest, when our kimono-clad server came to take our plates, I asked her to take mine over to producers Alex and Diane in the tatami room next door. Camerapeople Kira and Erik would have to wait until our conversation wandered into Not Safe For the New York Food Media Mafia territory and Tony told them point blank, "Don't shoot this." Poor Exec Producer Chris was shooting in the kitchen, Steak Outta Luck. </p>
<p>At the end of the night I drove the Caddy home. Tony slurred, "How is it that you're in better shape than we are?" Silly boy. Raiders of the Lost Ark? The shot glass scene? I switched from the endless rare, vintage bottles of sake to H20 early in the night. </p>

<p>I have made thirty-something episodes with Anthony Bourdain.  Needless to say, our crew has spent a lot of time over the last four years getting lost in the world together.</p>
<p>Mostly my producing job is to schedule a good show and to gently encourage Tony to see the brighter sides of really horrifically BAD situations....scenes gone wrong...situations you wouldn't wish on your worst enemy-- like the, "Birth of the Nacho" scene, in the Mexico show (lets just say it involved canned olives, some sort of gelatinous Cheese Whiz and eventually a nacho related injury); and on a darker note,  being in the wrong place at the wrong time...episodes like Beirut...</p>

<p><img style="float: left;" title="Producer, Tracey Gudwin" src="http://no-reservations-crew-blog.travelchannel.com/files/tracey TC photo.jpg" alt="Tracey Gudwin" width="350" height="249" />After five seasons of ABNR I've learned to TRY and avoid mistakes as such.    And if there is one type of show I know I can count on, it's an ITALY show.  I can always be sure, if we are going ANYWHERE IN ITALY, and eating ANYTHING ITALIAN, Tony is going to be excited about it.</p>
<p>In fact we could be holed up at an Autogrill gas station 1,000 miles from a decent hotel and Tony would still have a constant flow of golden sound bites flowing from his mouth.  The entire crew could be deep in the collective throes of a zombie-like epileptic seizure and Tony would still make a damn good show out of it.  He'd make the BEST show out of it. In post he'd say..."Ok, guys, it's not the show we set out to make, but throw in a little Dario Argento music and go in close on the Tagliatelle!"</p>
<p>So, when the mother ship calls and says, "fly to VENICE"....I'm feeling like the luckiest producer on Earth.</p>
<p>For the Venice show Tony had instructed the crew to catch up on a few of the classics, like, <em>Don't Look Now</em> and <em>The Comfort of Strangers</em>, films which evoke an unseen side of Venice, a darker side.  As a producer, it's always a blast to emulate the narrative or visual style of a director or artistic work.  So, I thought "great ...let's rent that Steadicam this time! Get out those 12k lights!  I need dollies, cranes, generators, trailers, CRAFT SERVICE for chrissakes! LET'S MAKE A FILM!" And then there is reality.  The reality of making art from what we have, which isn't much, but is actually quite a lot.</p>
<p>It's midnight, we've been shooting for 12 hours, Tony had two large meals today and now I've got to inspire the crew to figure out how we can shoot a bunch of night stuff with two flashlights, a luggage cart, and a tired host.  Plus, as usual, I've storyboarded 15 shots and I have MAYBE 1 hour to pull this off.  Cart assembled, Zach hops on with the camera, Nari, who equals half the size of the luggage cart, volunteers her Sherpa skills and Todd rigs lights to historic Palazzos with masking tape.  For the next 45 minutes we race through the eerie back alleys of Venice like a student film on speed.</p>
<p>The footage turns out beautiful.  It's always in back alleys, somewhere lost in the universe, where you realize how wonderful it is to collaborate with a great team.</p>

      <title>It Happened On a Street Corner in Mexico</title>

<p>As the newbie on the crew I knew that it would take some time to gain Anthony Bourdain's respect.  No Reservations is entering it's fifth season and the man has met and worked with countless different people &hellip; and like every job that involves being accepted as "part of the team"  (and no, there is no I in team) you have to earn your medal of honor, you have to gain your place in the ranks.</p>
<p><!--more-->After my first shoot in Chicago, which had gone very well thanks to the guiding hand of Chris - my boss and long time Tony friend - Mexico was next.  My second shoot, with veterans who between them have racked up well over 40 episodes.  I was going to have to step it up somehow.  I had heard through the grapevine that it may take a while for Tony to look me in the eye.  This was true, but it did eventually happen ... So how, and when, would I make it to the next level?  Beyond eye contact to perhaps a conversation or even a shared joke or two&hellip;? What would I have to do to gain his respect, and be able to call myself a member of the No Reservations crew and really mean it?</p>
<p> </p>
<p>It happened on a dark street corner in Puebla around 8pm local time &hellip; After a long day shooting with our friend Carlos and several of his family members, we all stopped for tacos at his favorite roadside stand.  There were several different choices of meat, including tripe, tongue and sausage.  Everyone it seemed was waiting for the chorizo&hellip; As 12 hungry people clamored for the same taco varietal, it happened. She said it softly at first and I thought no one had heard her. "Ojo?" That's eye right?  She took the tongs and sure enough an eye appeared from the boiling pot of meat. I was starving&hellip; I saw my opportunity and took it.  From my place at the back of the hungry group I fearlessly raised my hand. "Uno de ojo por favor".</p>
<p><br />And that was the moment I gained Bourdain's respect. From my left I heard him: "Wow, that's really impressive&hellip;" And then as the rest of the crew slapped me on the back and told me how impressed THEY were with my order another comment: "Somebody raised you right".  Puffed up with pride, I hungrily ate my eye taco (the only one of our crew to do so I might add) knowing that something had changed and that hopefully Tony (as I now like to call him) and I would go on to have a beautiful working relationship &hellip;  Thanks Mum and Dad for raising me right.  And if you ever have the option - go for the eye.       <title>No Reservations Uruguay: A Brother's Diary</title>

<p><strong>The Beginning:</strong><br />Join Tony to film a show in Uruguay? How quickly could I say "yes"? The plan was for a February trip -- summer in Uruguay. A no-brainer! February rolls around, and here I am, winging my way to Montevideo with my itinerant brother and his entourage of four from "No Reservations". Oh yeah -- it seems I am viewed as part of "the talent," so I get to fly in business class with Tony. It's good to be the king! Arrival in Montevideo is slightly delayed by the local customs chap inviting us to his office in back to share with us the benefit of his knowledge and experience dealing with thousands of dollars worth of camera equipment. After an extra hour of pointless discussion and waiting, we are met by our local "fixers" Sofia and Cecilia, and our van driver, Anibal. Our hotel, the Victoria Plaza, is apparently the place to stay in Montevideo, and indeed we see limos pulling up with various foreign diplomat and zillionaire types. Interestingly, I learned pre-trip that this hotel is actually owned by Rev. Sun Myung Moon's Unification Church, which has made a number of substantial and secretive investments in Uruguay.<!--more--><strong></strong></p>
<p><strong>The Archives:</strong><br />The ostensible reason I am along on this show is for "genealogical research," the "family connection" thing. As young children we always had thought that the French part of the family washed up on this side of the Atlantic during World War I. But one summer when we went over to France to clean out our deceased great-aunt's house, we discovered a trove of yellowed documents alluding to several generations of Bourdains in Uruguay and a nearby border town in Brazil. But other than a fleeting reference citing our great-great-grandfather Jean Bourdain as a "merchant" in Montevideo, we have never known why these people ended up in Uruguay, what they were doing, or why all remaining Bourdains on the continent returned to France after 1860. Who knows what these guys could have been getting into?</p>
<p><strong>The Antique Car:</strong><br />I am not sure what the premise is behind Tony picking me up in the wonderful antique car (which I am told is the very same one used in the "Miami Vice" movie). But driving around in this thing is fun ... What TV viewers don't see is Max and Sofia crammed down in the back seat for the entire weavy ride around old Montevideo. If they were height-challenged people, their forced embrace might be peculiarly romantic. But this looks more like a painful knee in groin/elbows in breasts story going on back there.</p>
<p><strong>The Chivito:</strong><br />The brief summary: Chivitos are a local favorite, a Uruguayan mega-sandwich equivalent of Wendy's "Grand Slam." It has everything you could imagine on it - sliced beef, bacon, ham, cheese, egg, mayonnaise, olives, pepper sauce on a big roll. Absurdly huge and impossible to eat neatly, it's about the best sandwich I've ever had. Tony and I nail these down. Plus beer. I enter into food coma.</p>
<p><strong>Phone Call:</strong><br />At a huge Brooklyn-size cattle ranch, an estancia, we are riding around in our host's Jeep in search of the ostrich-like "&Atilde;&plusmn;andu" when my cell phone rings. How is this possible? We are miles from any town or cell phone tower! I pick up... and hear the taped message: My kids' school is closed tomorrow due to snow. I'm soooooo happy to be here. Our hosts are fun and interesting people. There is nice wine here. I'm going to try armadillo. The sight of the armadillo trembling upsets several of us in attendance. I am personally very glad the assisting gauchos take the thing away to bring him into his next state of existence. And yes, it actually does taste like chicken!</p>
<p><strong>Cabo Polonia:</strong><br />This point of land at the angle of two long and unspoiled strips of beach is fantastically beautiful. It is an "ends of the Earth" type place where a 1960's/70's-style hippie commune has survived. It's gorgeous here and I enjoy our visit, but somehow I'm also finding this place a bit depressing. The blind bartender with his little penguin friend crapping on the floor near the bar ...this is getting kind of strange. Still -- I guess I'd rather see Cabo Polonia stay this way than be just another enclave for the rich.</p>
<p><strong>Jose Ignacio:</strong><br />The Punta del Este Resort area where the Rio de la Plata meets the Atlantic is a mix of communities. The most famous areas draw the Uruguayan and Argentine versions of the Rodeo Drive crowd, a super-glam caste of people, some replete with Botox and implants. Up the road from the "Punta," Jose Ignacio is a more mellow, low-key satellite community, with unpretentious sun-bleached buildings -- more Fire Island than Hamptons. Our visit to the restaurant "La Huella" is maybe my favorite time on the whole trip. The restaurant is right on the beach and I can feel sand in my toes. The weather is great, and I'm totally relaxed and in the mood for the mojito and good food I know are coming. I'm looking forward to chilling with Tony, eating good food by the sound of the waves, and relaxing.</p>
<p><strong>Having a Famous Brother:</strong><br />What is it like having a famous brother? I admit, it is sometimes strange. That's my brother all over bus stops! And sometimes in in-flight magazines when I go on business trips. I gather in Singapore and nearby, Tony has rock-star status. But Tony's always been a brilliant verbalist with a buzz-saw sense of humor, so I've never been surprised that some with money and connections finally figured this part out. When I see him on TV, I'm just like many fans who don't know him: I enjoy the travel to places I can only dream of going, laughing at his hilariously-expressed but bang-on social and cultural observations and his self-deprecating humor. I am proud of Tony and consider myself his biggest fan. But I get sooooo tired of people asking me, "Chris, where's your brother now?" "What's your brother eating now?" Yada, yada, yada ... Shut up!</p>
<p><strong>Uruguay:</strong><br />I love Uruguay and will miss it. I want to come back some day. I dislike pretension. Uruguay is delightful because it is so not pretentious. People have lots of space and are relaxed. They take pleasure in the small enjoyments of life the way one sees in areas around the Mediterranean in Europe. Food and wine are good, plentiful, and inexpensive -- at least for visiting Americans. The clothes in shop windows in the center of the capital are generally very un-chic, almost old-fashioned. I do not see a single McDonalds, Pizza Hut, Starbucks, Dunkin Donuts, or other similar chain.</p>

      <title>Under the Abbaya: Female Producers in Saudi Arabia</title>

<p>"Did you have to wear the black thing?"</p>
<p>Just got back from my first "No Reservations" road trip, and the number one question from friends, family and co-workers isn't about the food, the shoot, or how it was to work with Tony. It's about what I had to wear.<!--more--><br />Of course, the question is less about the garment, than how far I had to go to conform. It's about what the garment represents, or at least what everyone thinks it represents. It's about what it was like to be a woman working in Saudi Arabia.</p>
<p>I'm a producer. That means I'm ultimately responsible for everything that happens on a shoot: directing, story, logistics, details, feeding, transporting, lodging, gear, crew happiness, you name it. Big job, but I don't do it alone. My right arm is known as a Segment Producer, and is an unbelievably crucial member of the team. This position was also held by a woman, Nari Kye. Of course the winner of the contest, ultimately responsible for making it all happen, was Danya Alhamrani, yet another woman.</p>
<p>And yes, we all wore the black thing. It's called an abbaya, and it's basically a long-sleeved, floor-length dress that you pull over your head, and wear over your clothes. We also covered our hair with matching black scarves, so three women in abbayas produced an episode of "Anthony Bourdain: No Reservations" in Saudi Arabia. Oh, but I'm leaving out someone else who moved mountains making this episode: Dania Nassief, yep, another woman.</p>
<p>How did a group of women pull off a TV show in a country where women can't drive, can't vote, and really aren't supposed to hang out with non-related males? Well, they have a saying in Danya's hometown, "Jeddah is different." And for the record, so is she.</p>
<p>When we stepped off the plane after a brutally long flight from New York, I had no idea what to expect. Would Nari and I be shunned, ignored, treated like a lesser by the men we'd come in contact with? Having spent the last 15 years working as a woman in a male-dominated industry, I didn't really worry about it, since I've been dealing with that crap for years. That said, I've never had to do it in a country where the separation of the sexes was so strictly enforced by both law and culture.</p>
<p>One of the first and most obvious signs of that division was the abbaya. You can't help but notice, since literally every woman is wearing one. Most men wear a thobe, which is a long white cotton tunic, worn over white pants. So it's women in black, men in white. Needless to say, the contrast is striking. After all, what could be more "black and white" than black and white?</p>
<p>But that wasn't the only sign. In fact, there were literally signs, signs denoting separate male and female entrances for mosques, the "single" section (for men only) and a "family" section (for men and women) at many restaurants. No women allowed in the hotel pool. At the hotel restaurant, Nari and I were seated behind a screen, which Nari called it our "pen", separating us from male diners. I found myself wondering, "If even the breakfast buffet is segregated, how are we going to make this work?"</p>
<p>Nari and I had arrived ahead of the crew, to scout, bring over the equipment, and take care of last minute details. For about a week, we worked with Danya and Dania (names pronounced the same) taking care of the gazillion details that go into making a TV show. It took about 15 minutes in their company to realize that the separation of the sexes may dictate seating arrangements in certain restaurants, but it was not going to get in the way of making this show. Although the law may prevent the Danyas from literally taking the driver's seat, it did not prevent them from taking charge. Together they were an abbaya-clad dynamic duo of problem-solving, refusing to take no as an answer from anyone, male or female, that got in the way - my kind of ladies.</p>
<p>We also worked with a lot of local men: drivers, government officials and a "fixer" helping us out. Nearly every place we shot was male-owned, operated and staffed, and a whole host of male characters lent a hand along the way. And you know how all of them responded to women in charge? Great. Actually, they were a lot more than great. They were about the most warm, wonderful, welcoming group of people that you could possibly imagine. That bunch, with Danya at its center, was an extraordinary collection of people.</p>
<p>Now, before you think I drank the Kool-Aid, there was also plenty of evidence that things aren't exactly free and equal. Case in point: Danya and Dania operate Saudi Arabia's first female-owned production company granted permission to work without a male present. The first. And it took them over five years of fighting the system to get that paperwork in place. So they're not the norm, they're trailblazers.</p>
<p>And of course, Danya is no ordinary woman. She's pretty much the definition of extraordinary, and absolutely one of the strongest women I've ever met. Having grown up between Jeddah and North Dakota, she's got a pretty unique perspective on the similarities and differences between our cultures. There are an incredible number of things that I learned from her on this journey, including some unexpected perspective on the practice of wearing abbaya.</p>
<p>I should probably mention that I hate the idea of anyone telling me what to wear. I shun uniforms and conformity, they completely freak me out. So you can imagine how surprised I was to find that I didn't really mind wearing an abbaya. Ok, forget all the symbolic meaning for a second. For starters, it's practical. You never have to think about what you're wearing. You can toss it over a bikini or your jammies, and head out the door. And yes, I did both.</p>
<p>It's also the best way to blend in that you can imagine. Working on the show, the last thing that you want to do is call attention to yourself, since all eyes belong on Tony and Danya. Producers are there to get the show made, and need to find a way of making that happen, while blending into the woodwork. I can't imagine a better way of doing that than wearing an abbaya. Accidentally stumble into a shot? No problem. Instead of out-of-place Western eyesore, I look like a local.</p>
<p>Of course it goes without saying that you also want to respect all the local laws, customs, and tradition and in that sense, no problem. Abbaya-me.</p>
<p>But besides all that, I began to realize how the abbaya affects the way you communicate with women, how it shifts your focus. Without all the visual cues that wardrobe, hair, or even subtleties of gesture provide to help you "see" someone, you begin to read them in a different way. The art of conversation and eye contact gain more weight, because that's all you've got. The face, where attention really belongs in the first place, is where it stays. It forces you to work harder to see someone, and to pay deeper attention to the words coming out of their mouth. Certainly the most important abbaya-related thought I had had during the trip. Ironic that I didn't even notice all this was happening, till the first time I saw Danya take off her abbaya.</p>
<p>Although everyone wears an abbaya in public, it comes off at home. When you are hanging out with friends or family, no abbaya necessary. Underneath, many women dress just like they do in New York: skirts, heels, low cut tops, you name it. One particularly scorching day, after Danya, Nari and I had spent hours scouting locations in the desert sun, we had a meeting in my hotel room. The second the door shut behind us, we tossed our sweat-drenched abbayas and head-scarves to the floor. Danya was wearing a t-shirt and shorts. For the first time, I could see her hair, her arms, her legs. I noticed immediately how different this felt. In some ways, it was like I was seeing her for the first time. Like a layer that was new and more intimate had been revealed. I realized in that moment that that was likely the point of the abbaya, or at least part of it. It's saving that kind of intimacy for those that are close to you, your friends and family, who have earned the privilege. For the first time, I saw that the abbaya may have a role in protecting women, and not as something simply designed to control them.</p>
<p>Don't get me wrong, I'm not advocating for the abbaya. I don't want to see them parading down the runways, in a window on 5th Avenue, or on the sale rack over at Old Navy. I don't want to see rules about women's or men's clothing anywhere of any sort. I can't even get behind the idea of Black Tie. And honestly, in terms of focusing communication, none of us should require an abbaya to make that happen. Still, having that simple "abbaya insight" felt like an incredibly important step toward understanding Danya's culture. And isn't that exactly what travel is all about? Taking a walk in someone else's shoes, or under their abbaya, and trying to find a way of seeing things from their perspective.</p>
<p>I've been back in New York for about a week now. Last night as I walked home, I was thinking about how much I missed Danya, her incredible laugh, and the warmth and hospitality of her friends and family. The spell was broken when a stranger approached me, offering a graphic description of something he'd like to do involving his face and my backside. For a second, I couldn't help but miss my abbaya.</p>

<p>I know it is going to be a unique shooting day for No Reservations the minute I jump out of the drab green helicopter the Colombian Government provided us with for this scene. Since I am first out, I bolt like my a** is on fire towards the shoulder-high plants at the edge of the clearing we chose as a landing zone. My feet sink into the soft soil as I run, making the few yards I need to travel to reach the safety of the crops seem to take forever.<!--more-->I look back and see our military handlers file out next ... there are three of them, and all are dressed like Navy SEALs, ready with their MP5 machine guns to provide us a blanket of what is known in the military world as "suppressive fire" to protect us in case an emergency extraction is warranted while we are filming the upcoming scene.</p>
<p>Todd and Zach from our crew emerge from the heli next, and as they near my position, they both perform a perfect tuck and roll into the safety of the brush. Watching this, I am immediately amazed by how nimble our camera guys are while carrying around 30 pounds of lenses and gaff tape.</p>
<p>Tony and Tom hop out last. Tom boldly takes what is known as the "human shield" stance to protect our host in case things get hairy on the ground. They make it to our position with no incident, and we are all safe and under cover in the field.</p>
<p>I do a quick head count, and while doing so, notice Todd frantically plucking leaves off a nearby plant and jamming them by the handful into his camera bag. He sees me staring and shrugs, "When in Rome...ya know?" I let Todd get back to his gathering, and start thinking about our next scene.</p>
<p>What I had considered was the logistical difficulty of filming a hot dog scene in the Colombian rain forest. It is just a b***h to get in here in one piece...and it is hot -- hotter than one could imagine. My backpack is full of bottled water for the crew, and I offer one up to Zach - he shakes his head, too busy looking for a spot in all this green to white balance his camera.</p>
<p>What I had not considered was that Zach's intricately modified camera rig looks dubiously like a shoulder-mounted Stinger missile launcher ... this may create problems for us, especially if someone sees us from a distance.</p>
<p>As our helicopter lifts off and heads to the rally point I begin to wonder how the hell we are going to pull this thing off...and if the hot dog will end up being the end of Act 4 or possibly the beginning of Act 5 in the final cut of the show. Hot dog scenes are delicate in that way -- it all depends on the quality of the toppings, and if the bread is fresh baked or not, also if the actual dog is pork or beef.</p>
<p>BOOM</p>
<p>Our transport helicopter explodes mid-air with a shockwave so powerful it blows my annotated copy of the filming schedule for the day out of my hand. The explosion is followed by the arrhythmic popping sound of machine guns on full auto - I can hear the bullets cutting through the vegetation around me.</p>
<p>My first thought is - I hope the guys are filming this.</p>
<p>Our handlers scream for us to "hit the deck", and as I dive to the ground, my ears are still ringing from the blast. Landing face first, I spit out a mouthful of dirt as my head spins, and there is a redundant sound pulsing through my head akin to a phone ringing at full volume inside my skull...is this what shell shock feels like?</p>
<p>I gather myself and try to make a another head count - to my right I see Tony calmly drinking a beer and eating a slice of pizza while chatting up one of the soldiers working with us (where the hell did he get that piece of pie?)</p>
<p>To my left is a collection of spent mortar shells and ammo cases as well as an old style rotary phone, half buried in the moist Colombian soil.</p>
<p>The phone is ringing in cadence with my head.</p>
<p>So I answer it.</p>
<p>"Hello?"</p>
<p>"Buenos Dias, this is your 7AM wake up call."</p>
<p>I hang up the phone, and tuck and roll out of my plush bed at a beautiful and safe hotel room in the walled city of Cartagena -- it is time to go to work.</p>
<p>As my dream fades, I laugh out loud at it. Turns out Colombia is a completely different kind of dream...it is one of the most amazing countries I have ever visited. The Colombian people are awesome - unbelievably kind and accommodating, and the food is out of this world. Cartagena de las Indias is spectacular in its old world glory, and Medellin is as progressive a city as any I have been to in the USA (and much, much, more into their food).</p>
<p>You need to see it to believe it. But right now, I really want some coffee - I need to think about our trip to a remote fishing village off the coast of Cartagena that shoves off in about an hour.</p>

      <title>The One Thing You Don't Do</title>

<p>When filming a prison interview, the one thing you don't do is keep a shot tape in the camera, in case they ask you to hand it over. When you're producing a home makeover show, the one thing you don't do is become the middleman between a homeowner and a contractor, because you effectively become the contractor. When directing No Reservations, the one thing you don't do is tell Tony what to say because, well, you just don't.</p>
<p>I've worked with a few different hosts and a lot of times, you just feed 'em lines. It's not disingenuous or manipulative. When you do, you have no choice.<!--more--><br />Here's the math: say you have a shoot day with two locations. Once you include travel, lighting, set up and breaks, a 10-hour crew day is more like 4, so two hours filming per location. A scene is broken up into different beats. In No Reservations, a scene might include establishers, walk & talk, meal prep, meal and conversation, say 20 minutes per beat. In a travelogue show like No Reservations, where Tony's voiced-over thoughts thread the whole show, 90% of what you need to film is process or non-sync -- basically, people not talking. That said, on a hosted show, you absolutely need the host talking a little bit to camera, directly to the viewer. So tallying it up, sometimes you have a couple minutes or less to get that done. In those stressful moments, sometimes you just have to tell someone exactly what to say.</p>
<p>Although the same math applies to Anthony Bourdain: No Reservations, the same rule does not apply to Anthony Bourdain. There could be some hostage strapped to a bomb that can only be diffused by Tony looking at a camera and saying what town he's in and why he's there, you still don't tell him what to say.</p>
<p>So what do you do?</p>
<p>Laos Day 4, Scene 3, Strategy 1: You ask really, really nicely. Tony and guest are riding on elephants through the forest. In the one moment the elephants are next to each other, still and all cameras are perfectly lined up, I tell Tony 'hey, this would be a great time to ask a question.' I think the only conversation that will make the final cut is Tony telling me that there is a reason in those old Westerns, they don't film people talking while on horses.</p>
<p>Laos Day 4, Scene 1, Strategy 2: You kindly suggest. I'm filming Tony looking at a ricefield where 13 live bombs from the Vietnam War have been found and wired to explode. Before they detonate, I suggest to Tony that after the bombs go off, it would be a great moment to open the show. What followed was 13 bombs going off and then a deafening silence.</p>
<p>Laos Day 3, Scene 2, Strategy 3: You find a workaround. Tony is sitting around a huge spread with a group of villagers. After 10 minutes of silent eating, there is absolutely no conversation. I make eye contact with the camera guys and raise one finger which tells them to go in for tight singles. Then I tell the translator to call over to one of the guests and ask him to ask Tony a specific question (in Laoso so Tony won't be annoyed.) After a minute, the guest looks up and asks with total sincerity, "Tony, why did you want to come to Laos?" What follows is an amazingly heartfelt and surprising response that made the scene one of my favorites.</p>
<p>Laos Last Day, Scene 1, Strategy 4: You just let him talk when he wants to talk. By the last morning, I had absolutely no footage of Tony talking to camera and I was resigned to just make it work when I got back. We all break off to each film the countryside as dawn lifts. Although he's on a break, Tony decides to follow Zach, one  of the camera guys, to some bridge.</p>
<p>Of course, I don't know this is happening until later that morning when Zach hands me a tape and insists I watch right there as he looks on. He never does this, so it must be good. In some cafe by the river, mopeds whirring behind me, I cue it up. I watch Tony crossing a narrow bamboo bridge through the morning fog, monks in bright orange robes passing by, lush, green rice fields in the distance. He sits down, looks right at the camera, and describes why this country is so hauntingly beautiful, so unforgettable -- putting in perfectly unscripted terms what the whole crew had been feeling all week.</p>

<p>To paraphrase a well-known chef, author and TV personality, making television is a lot like making sausage. Some seemingly strange and terrible things happen in the process, but the end result is usually very satisfying.  So to follow this analogy through, if making TV is like making sausage then, I suppose editing would be like the part where the various bits are stuffed into the intestinal casing.  Thankfully, this is all just metaphorical; I've yet to actually use an intestinal casing in any project. Anyway, the point is-- editing a very satisfying job (this show especially so).  The amount of creative input you're afforded, the opportunity to shape something from a rough outline & raw footage to a finished product is great, and I'm lucky to have this for a career.  But at the end of the day, who the hell knows what an editor really does? I've been working in this field for a few years now, and it's still not a simple question for me to answer ...<!--more-->On the occasion when I meet someone new at a party or other social function, or whenever I'm around extended family and the subject of my involvement with No Reservations comes up, it is typically met with some enthusiasm, if not outright excitement. Even people who have only a passing knowledge of the show will know about "that chef guy who ate the live cobra heart," or "oh yeah, the guy who ate the pig anus."  Typically the first question will be, "Wow, do you get to go to all those exotic locations with Tony?"</p>
<p>Well . . .no.</p>
<p>I get to watch all the crazy stuff he does and help whittle it all down from fifty hours to forty-five minutes.  This explanation usually elicits something in the neighborhood of: "Hmmm. . ." or "Oh. . ."  or occasionally I get a "Really. . ."   Now, it's true, I don't get to experience the exciting exploits of the ABNR crew&acirc;&euro;&brvbar; the smorgasboard of exotic foods ...the sublime beauty of a sunset on Waimea ... a taste of the local hooch ... but that's okay, because there's something else I don't get to do -- worry.</p>
<p>I work in a comfortable, safe, air-conditioned production space in downtown Manhattan.  The biggest peril I face on any given day is whether I will make it to the office before the complimentary bagels and fruit are gone. I can work comfortable in the knowledge that I will never have to swim in river fluke infested waters. I will never have to drink fermented beverages of dubious origins. I'll never come in contact with DefCon 1 level gastrointestinal parasites; I'll never be expected to eat anything I might want to have as a pet.  Nor will I be obliged to load up on mystery meat, just-removed genitals, dirt, feces, etc.  There's no worry of vomiting on camera while squid fishing in rough seas.  No worry of hitting that one village where the Avian Swine Ebola outbreak just started.  No chance that I'll fall from a helicopter that's flying twenty feet above a molten lava field.  My job is light on the adventure and sex appeal, but heavy on the free coffee. I got no complaints.</p>
<p>Actually, that's not entirely true.  Like all editors, I've got a shitload of complaints.  If you've ever spent any prolonged amount of time with an editor than you know that complaining is as close as most will get to a contact sport.  It is woven into the spirals of an editors DNA.</p>
<p>"The edit room's too hot."  "The edit room's too cold."  "This editing system is too old."  "This editing system is too new."  "I've got how many weeks to cut this episode?" "The network wants to take out what?!  That's the best part of the show!" "What do you mean when you say, 'more midgets'?" And on, and on, and on.  In the process of editing it's often necessary to have to play and replay a single section of an edit multiple times to make sure that the picture, or sound mix, or music cue is working just as you want it to. I can't count the number of times that I've been working next door to someone who's cutting a show and they have their playback speakers set at "Who Concert" decibel levels.  And it's inevitably a truly horrendous show, something along the lines of a Celine Dion world tour video, a show about monster trucks, or a Girls Gone Wild Director's Cut DVD.  And did I mention the lack of exposure to sunlight?</p>
<p>Even if you're lucky enough to work in an edit room with a window, it's typically covered so as to avoid any glare on the monitor.  To help illustrate just how little natural light editors see on a daily basis I've compiled a short list of people who average more hours of exposure to sunlight per day than editors.</p>
<p><strong>People Who Average More Daily Exposure to Sunlight Than Editors:</strong></p>
<p>1.  Prisoners in solitary confinement</p>
<p>2.  People living above the Arctic Circle from September through December</p>
<p>3.  Anthracite miners</p>
<p>4.  Children who have fallen down wells</p>
<p>5.  Subway construction workers</p>
<p>6.  Scientists studying bush babies</p>
<p>7.  Missile silo technicians</p>
<p>8. Russian Naval submarine crews</p>
<p>9. Naked mole rats</p>
<p>10. Vampires</p>
<p><br />This is merely a small sampling, but you get the idea.</p>
<p>Despite the lack of natural light, despite the sedentary nature of the job, despite the fact that you can only vicariously enjoy all of the amazing places that Tony visits, it's still a great gig.  Editing is, in many ways, like writing.  You have the chance to craft the episode in the edit room and nothing is more satisfying than taking the scene that was never meant to be or the one that didn't quite turn out the way everyone thought it was going to and turning it into what our host likes to refer to as "video gold."</p>
<p>It's also a collaborative art, you, the producer, the executive producers and of course, Tony help to turn a handful of separate scenes into a journey that hopefully informs as well as entertains.</p>
<p>I recently finished work on the Hawaii episode, which will be airing on March 3rd (10 p.m. e/p).  It came out great.  Our camera crews shot some truly remarkable stuff and Tony had a great time.  Anyone reading this will undoubtedly be pulling up the Hawaiian Airlines website as soon as the show ends.  So, enjoy!</p>

<p>We set out to explore Hawaii's central myths - Tiki bars, luaus, Spam, the Vulcan Goddess, and, of course, big wave riding.  And when I say "big wave" I mean the 30 foot vertical wall that boys from Palm Beach to Palm Springs gaze up at from their bunk beds before going to sleep at night.  After all, this is the Bourdain Show, the man's eaten a wart hog's ass - it has to be spectacular.<!--more--><br />Back in NY I had pitched the idea of pairing Tony up with legendary Darrick "Double D" Doerner, Laird (the God of surf) Hamilton's right hand tow-in man. My executive producer was initially excited but as we got closer to the shoot, hidden expenses started to circle the sequence like sharks drawn to a bleeding rookie. I think the boss' last words to me were "fine, do it, but bring me back Riding Giants." No problem.</p>
<p>Surfer's are not production types. They don't synch their iBooks to their Blackberries - they sleep in VW's and rub their equipment in something called Sex Wax. Needless to say, nailing down Darrick and his cohorts is slippery business. We would call, wait, get cryptic messages about the sea. We were getting the impression that the size of the surf might not be what we were hoping for, so, on the day Zach (trusty camera man) and I decide to pre-scout the North Shore and let Tony catch some extra Z's. Keeping Tony happy is every producer's PFD (personal flotation device).</p>
<p>On the way to the infamous Haleiwa Harbor - home to crankster gangsters (meth dealers) and other assorted ornery locals - I finally get the elusive Double D on the phone. His few words to me are "meet me in the parking lot, I'll be in a hood." This is gonna be neato. When we get there a lone figure is set against the surf, back to us, staring not at tsunamis, but something more akin to a punch bowl - something you'd loose your toddler in were he equipped with the appropriate floaties. Darrick actually turns out to be a very cool guy, the consummate soul surfer who doesn't so much answer questions as respond with greater philosophical queries, like "today, nobody owns the ocean, but who will the ocean own today?" Deep and foreboding.</p>
<p>We quickly hatch a plan to send Zach out on the jet ski so that we can determine if he's even capable of holding a shot while bouncing around on the back of one of these things. So while Zach and Double D zip around on the giant puddle, I pace the shore trying to decide whether or not to postpone the shoot. On the one hand, there are no waves and my boss' parting words are still ringing in my ears. On the other hand, I've already spent one day's steep set of fees just to get Double D and crew out in the slop with their neon crotch rockets. I'm really in the production trenches now boy.</p>
<p>Finally, the prospect of slogging Tony through traffic to present him with the lagoon of love I'm looking at, scares me more than my mounting budget and I decide to call base camp and tell them to reschedule for Monday. Meanwhile, Double D and Zach come puttering back - Zach looks like he just saw the Titanic sink, shaking his head slowly, a mix of fear and apology. You see, way back in the early planning days of this debacle Zach had insisted that we didn't need a special surf videographer, that having braved so many inhospitable climates with Tony before, he was the man for the job. Shoulders slumped, wet, a shadow of his former self, he was now resolute about our need for a specialist. I had to agree, if he couldn't hack it in the kiddy pool how would he do in the real surf I was banking on for Monday. Double D informed us that this meant we had to contact the renowned Don King - ocean shooter non pareil. I pictured the fat boxing promoter in a skintight wetsuit with his shock of white hair whipping around in the spray. Apparently, it wasn't the same guy - but he was going to charge the equivalent of a championship purse ... Cha- ching. This segment's gonna rock.</p>
<p>When Zach and I get back to Honolulu, dejected and tired, we find out that Tony has found a local and eccentric take on the hotdog (apparently an obsessive quest for him), and not only that, he's directed his own scene revolving around this meat tube that gets mechanically shot into a closed cylindrical bun. Yes, apparently he couldn't stand for the lag in productivity our excursion had caused and roused his beloved cameraman "Toddles" out of bed to shoot his own segment and in effect pirate my show (if the captain of a ship can be mutinous)... I wont spoil what happened Monday because you can see for yourself when the episode airs. I will, however tell you that Double D sent us off with a warm smile and the ancient surf dictum "the sea is in charge..." I could adapt that in a number of ways to apply to my line of work but I think in this case it'll have to be "how much does the sea charge?"</p>

<p>Once and a while someone on one of these message boards makes a comment<br />to the effect of "I wish I had your job" or "You have my dream job" usually<br />directed at one of the 'No Reservations' producers.<br /><br />I recently had the opportunity to observe producer/director Paul Cabana and<br />segment producer Rennik Soholt "living the dream" as it were and it was<br />an interesting reality check.</p>

<p><br />I met the whole crew when they arrived at our hotel in Tokyo with the intention of taping their arrival. They were coming off of a week in Laos and looked it. In fact, they looked so sick, tired and out of it I actually took pity on them and turned off my camera.</p>

<p><!--more-->Rule #1 to the dream; you work sick, you work tired and then you start the next show with one days "rest."</p>

<p><br />Incidentally, Rule #1 doesn't apply to Tony. He had a press conference an hour after he arrived; or Rennik. Segment producers work with our in-country "fixers" to make sure that we really have something to shoot  so that there's a show to edit later. Segment producers quickly learn that about half of whatever's been "confirmed" over the phone has changed, disappeared, been misrepresented or otherwise come unglued by the time we've arrived.<br /><br />Our Japan fixer Michiko is as good as it gets and yet she and Rennik were either in conference or on the phone constantly during the trip. <br /><br />Other things the segment producer does;<br />a)    Log the 75 hours of tape shot in Laos so that they can be loaded<br />      as soon as we get back.<br />b)    Act as camera assist on the shoots. Rennik knows whose wide angle lens<br />      is whose, which batteries go where and keeps the gear from disappearing.<br />c)    Supply food and drugs. Yes, drugs. Advil, Aleve, Tylenol, Excedrin,<br />      a dozen other pain killers and most importantly Imodium (don't leave home without it, seriously).<br /><br />So maybe you'd like to direct. That must have been Paul's dream once. To show up at a location you've never seen, plot out a two camera shoot and try to establish a story line consistent with the rest of the show in <br />about 20 minutes. That and get enough B roll footage and establishing<br />shots, much of which he shoots himself as our third camera.</p>

Rennik and I spent a surprising <br />amount of time outside of tiny Japanese restaurants trying to stay warm.<br /><br />You might think people would get cranky and fed up and quit. You would be wrong.  I've never seen a more focused bunch of professionals<br />with a better attitude towards doing excellent work.<br /><br />Oh, and I don't know of any positions available at this time.</form><form       <title>No Matter How Things Change</title>

<p>I am sitting in my office at Zero Point Zero trying to figure out exactly how we are going to get Queens of the Stone Age out to New York in the middle of their U.S. Tour when my phone rings. It is Chris, the Executive Producer of the show, and when he tells me where I am going on my next shoot, I nearly drop the phone out of my hand.</p>
<p>Chris says that Tony is going to New Orleans, and it is going to be a different kind of "No Reservations" I know it sounds strange that a statement like that could cause me enough shock to lose my grip on the handset of my office phone, but let me explain<!--more-->Turns out that I happened to be living in New Orleans as Hurricane Katrina was making its way towards land, and a few of my friends and I decided to have a hurricane party instead of doing what 95% of the population of the city chose to do (grab all they could and get the hell out) before the storm made landfall.</p>
<p>Needless to say, we spent quite some interesting days in the city during the days after Hurricane Katrina. We mostly passed the time by standing on the roof of our flooded house, and using a boat that we had "liberated" from a nearby backyard to cruise around the neighborhood. So now, after living in New Orleans, and after staying in town during the hurricane, I get to go back and shoot an episode of No Reservations there quite a coincidence, to say the least.</p>
<p>Speaking to Chris, ideas for possible restaurants and places to see are rapid firing through my head, "Ok I got some ideas, this is gonna be great." I then remember his earlier comment, "What makes this show different?" I ask. Chris says, "Tony wants to see how the city is recovering after Hurricane Katrina, most importantly, how the restaurants are coping with the storm and aftermath. The focus is on what Katrina did to the people and the industry."</p>
<p>I am speechless</p>
<p>Let me impress the gravity of that statement for all of you:</p>
<p>New Orleans is known all over the world for its culinary prowess. Hurricane Katrina is the worst natural disaster to hit the United States in modern times. And I spent a good deal of time walking around my flooded neighborhood in late August 2005 this is going to be interesting.</p>
<p>After a few weeks of prep I am getting off a plane with the rest of the crew at Louis Armstrong Airport, just outside of New Orleans proper, and am immediately assaulted by a very familiar blast of humidity accompanied by a feeling of homesickness. I forget how hard it is for me to come back now. So many memories left behind after that storm, so many changes as well. As for the shoot, it was a busy week and we covered a ton of ground.</p>
<p>While filming in New Orleans, a few things were for sure: The food in this town still kicks ass...period. The crew and Tony can still roll out of bed at the crack of dawn, shoot four locations, and then end up at a bar until almost 2AM and still get up for an early call the next day (multiple nights). And, most importantly, the city is on its way back, although changed forever. Everyone here has a Katrina story now, and in a town full of people who love to tell you a little bit about themselves, they all took some time to share with us some stories about that tragic time and the city they love. But if the stories we heard were quite different than what you would think&acirc;&euro;&brvbar;these people are not beaten down by what has happened, but focused, ready to keep pressing forward regardless of what has happened. They are looking to the future, to whatever it may hold. And these are the people we spent the week talking to and sharing meals with.</p>
<p>I won't go into details about what we did or who you will be seeing in this episode (though I bet you will recognize a face or two besides Tony's when you watch the show), but I will say this: As we called wrap and shut off the cameras, we were at a barbeque full of newfound friends that had shared their stories with us. On my plate was a mound of slow-cooked pig and homemade coleslaw, and as I dug my fork into it to gather a giant bite, I felt like we had done the city justice ... and for a brief moment, I felt like I was home again.</p>

<p>Sleep, the night before leaving for a shoot, is a lost battle. Every possible disaster scenario goes around and around in my head over and over again. Since this was my first official Associate Producer gig, I needed everything to go perfectly. I had to prove to Tony, Chris and rest of the crew I was a valuable asset. Releases, scenes, chefs, costs then the next thing I know, the alarm goes off and the day has come: shoot day 1.<!--more--><br />Sleep during the week varies drastically. The first night is the hardest. The whole shoot is still ahead and I'm in a new space far away from home albeit a luxurious and hip hotel. And already on day 2, I can tell the Vancouver show is going to be different and special. The city and its inhabitants are bursting with character. Even raining couldn't get us down. Tojo, EA Sports, Uwe Boll, and Whistler/Blackcomb &acirc;&euro;" one great shoot after another! And getting to explore a fun new place with Tony is pretty much the best job. I sleep every night looking forward to another day of exploring this amazing city.</p>
<p>Sleep, the final day of the shoot, is the best sleep ever. After celebrating with Tony, the crew, three of Vancouver's finest chefs, and many new friends we picked up along the way, I hit that pillow with great relief, satisfaction and a big, big (heavily intoxicated) smile on my face.</p>

      <title>99 PROBLEMS BUT A BRIT AIN'T ONE</title>

DAY ONE
First time producer on Bourdain. looking forward to a cakewalk - what could go wrong? (1) Tony's car to the airport an hour late. (2) he's pissed. that surly intimidating TV persona? Not so much for TV. (3)...</description>

<p>DAY ONE</p>
<p>First time producer on Bourdain. looking forward to a cakewalk - what could go wrong? (1) Tony's car to the airport an hour late. (2) he's pissed. that surly intimidating TV persona? Not so much for TV. (3) Economy Plus should be renamed Business Minus. We're sitting four across like we're strapped on a roller coaster. The symbolism doesn't escape me. (4) I switch seats with Todd who claims he has a phobia of middle seats. Note to self: watch out for The Todd. (5) We arrive in the UK and still haven't confirmed our key scene, Marco Pierre White. (6) We're testing new cameras on this shoot and find some big glitches: the big one is the focus ring. It's way off. (9) Todd and Zach really annoyed. Not exactly a smooth start.<!--more-->DAY TWO</p>
<p>(10) We need B-roll that's not too obvious and perfect. Need something dark. But everything looks like Harry Potter hooked up with a rainbow. (11) In case we end the show in Scotland, I need Tony to do an episode wrap to camera. So my first question, ever, to Tony has to be 'what did you learn?' from a trip he hasn't had yet. Nice. (12) Still no word from Marco Pierre White. (13) I have to film Tony walking. He's walking twice his normal speed and Zach and I are literally running after him. (14) Tony hates walking shots. (15) I gather this from when he says 'I hate walking shots.' (16-26) We have to film about ten more walking shots.</p>
<p>DAY THREE - IAN RANKIN</p>
<p>(27) Tony's with his friend, Ian Rankin. We need to set up the bar, so we have them order a pint while they wait. (28) They need some beers for the scene. Let's order pints. (29) lunch break, so they get a pint. (30) chip shop not ready. Let's all get a pint. (31) B-roll break. get a pint. (32) need to wait for restaurant. pints. (33) wait for light. Pints. (34) Meal scene. They need beverages. Wine. (35) Finally. Time to film the key conversation. So why the f*%k are they slurring their words??</p>
<p>DAY FOUR - TRAIN SCENE</p>
<p>(35) Taking the train down to London. Zach realizes he left his passport in the hotel safe. We're here for a few more days. They'll just send it to us in London. No problem (36) great news from Marco. He's letting us film us hunt... but there's a catch. only one person/camera can go.</p>
<p>DAY FIVE - MEAT MARKET</p>
<p>(37) 3:30 am wake up call. (38) 4 a.m. at Smithfield market. I'm filming a butcher fondle a bucket of testicles. Which he may or may not be enjoying. Dreams really do come true. (39) 6 a.m. filming the butchers at the cock tavern and they're covered with blood. Wait a second. That's actually great. (40) they won't let us into the kitchen to film. They say come back at 4. (41) I come back at 4. Still no luck. Screw it. (42) I'm filming B-roll of a telephone booth but there's a guy in there who's convinced I am recording his conversation which we can assume at this point is not so much legal. A police officer comes up. Time for the 'ol standard tourist filming line. Because every tourist needs really good b-roll of a phone booth. (43) Send in The Zach for the hunting scene with Marco and Tony. Pray that they shoot a deer, have a great conversation and that everyone stays safe, in that order. (44) They come back, deer in tow. Tony shot his first deer and I find myself saying the phrase, "Todd, let's get some carcass porn" (45) Filming dinner scene. It's so dark we need 9 fat candles around the table. Now it looks like some sort of creepy Hannakuh.</p>
<p>DAY SIX - FERGUS AND PHIL</p>
<p>(46) Filming in St. John Bread & Wine and it couldn't be louder. (47) Next up, filming in Jerry's Bar and it couldn't be darker. (48) Finally, filming in Soho with Phil Dirtbox and it couldn't be more chaotic. But somehow, strangely, it's all working out and the footage couldn't be better.</p>
<p>DAY SEVEN - MORCHEEBA</p>
<p>(49) Last scene of the shoot. With the band, Morcheeba. Some of the nicest guys I've had the pleasure to work with. Tony is having a blast and it shows. We end up filming two fantastic scenes involving two songs... but I have absolutely no idea how we can use it all in the show. (50) Zach's passport doesn't arrive and he has to stay in London an extra day. (51) Why couldn't Jay Z have written 51 Problems? Let's just assume there were a bunch more and skip to... (99) We've just wrapped the UK show. My first, but I'm only halfway through. It's right on to Athens for seven more days, and another show. One down. One to go. I'm sure I'll have 99 more problems, but this Brit show, thank god, ain't one.</p>
